Bobby Schaffer is the chef and owner of Lost Larson. Schaffer has led the pastry programs for some of the world’s best restaurants, most notably Blue Hill at Stone Barns in New York and three star Michelin restaurant Grace, in Chicago. Although attending culinary school for culinary arts, Schaffer quickly fell into pastry during his time in Spain, first at Quique Dacosta and afterwards at world renowned pastry shop Oriol Balaguer. It was here his love for chocolate blossomed and a dedication to the pastry arts ensued.
