Elizabeth Coe – 3rd-5th Grade at Butler Elementary School – Springfield, IL
Elizabeth has taught multiple levels and abilities within Special Education for eight years. She received her Bachelor’s Degree in Learning and Behavior Science from Eastern Illinois University in 2015 and a Master’s Degree in Reading in Literacy in 2018. She is currently a special education teacher, teaching students in grades third through fifth at Butler Elementary in Springfield, IL.
As a diabetic for seventeen years, Elizabeth believes that any child at any age can learn to make healthy and meaningful choices that can lead to a better way of life. Elizabeth has noticed the excitement and involvement when her students are working with food in the classroom! Their excitement is shared with their teacher as they work together, learn and grow while working in the Pilot Light Food Education Fellowship.
