Lindsay Dansdill
Title: Attorney, 4 years on Pilot Light’s Advisory Board
Lindsay Dansdill has served on Pilot Light’s Advisory Board for four years. She first became involved after attending Pilot Light’s annual Feed Your Mind Gala and was beyond impressed by the grass roots initiative and dedication to the oft-ignored topic of nutrition inequity. The Pilot Light mission perfectly melded her love of food, cooking and passion for childhood accessibility to food based education. She is beyond excited about the growth of Pilot Light and its future endeavors. Lindsay works as an attorney by day, serving Scandinavian companies doing business in the U.S. as well as established U.S. entities. She attended the University of Michigan and Loyola University School of Law.
Favorite Food Education Standard:
All of these standards work with the goal of allowing food to bring varying communities together as opposed to furthering dividing a diverse and increasingly connected world.
A favorite food memory:
Lindsay’s first introduction to the food world was brought to her through side hustles at various restaurants throughout her college career. While working as a server, she eagerly spent time in the kitchen, learning how to perfect a vinaigrette and discovering the beauty of cooking a beautiful meal and improvisation while on a budget, skills she hopes to pass on to her young daughters.
Why I Support Pilot Light:
The Pilot Light mission demonstrates that eating well should not simply be a coveted hobby for the wealthy but an opportunity for everyone of all ages to learn, gather and fuel their bodies through accessibility and creativity. I am beyond grateful to the Chicago chefs who have devoted time out of their incomprehensively busy schedules to support this very important cause.
