    Spiced Molasses Cookies From Our Kitchen to Yours

    Spiced Molasses Cookies

    Ingredients

    1¼ cups all-purpose flour
    ½ cup whole wheat flour
    1 teaspoon baking soda
    1 teaspoon kosher salt
    2 teaspoons ground ginger
    1½ teaspoons ground cinnamon
    ½ teaspoon ground cloves
    1½ teaspoons finely ground black pepper, plus more for sprinkling
    1 cup (packed) dark brown sugar
    ½ cup (1 stick) unsalted butter, room temperature
    1 large egg, room temperature
    ⅓ cup plus 1 Tbsp. mild-flavored (light) molasses
    ¾ cup powdered sugar
    1 tablespoon (or more) milk
    Raw sugar (for sprinkling)

    Method

    1. Whisk all-purpose flour, whole wheat flour, baking soda, salt, ginger, cinnamon, cloves,
    and 1½ tsp. pepper in a medium bowl to combine.

    2. Using an electric mixer on medium speed,beat brown sugar and butter in a large bowl
    until light and fluffy, about 3 minutes. Add egg and beat to incorporate. Add ⅓ cup
    molasses and mix just to combine. Reduce mixer speed to low and gradually add dry
    ingredients; beat just until incorporated. Pat dough together and wrap in plastic. Chill
    until firm, about 1 hour.

    3. Place racks in upper and lower thirds of oven; preheat to 350°. Scoop out level
    tablespoonfuls of dough and roll between the palms of your hands into smooth balls.
    Place on 2 parchment-lined baking sheets, spacing about 2 inches apart (you should be able to
    fit about 12 on each sheet).

    4. Bake cookies, rotating baking sheets top to bottom and back to front halfway through,
    until just firm around the edges, 9–12 minutes (if you like chewier cookies, bake less,
    and if a crispier cookie is your thing, bake a little longer). Let cookies cool about 5
    minutes on baking sheets, then transfer to wire racks and let cool completely.

    5. Repeat with remaining dough, using fresh parchment paper on baking sheets.

    6. Whisk powdered sugar, milk, and remaining 1 Tbsp. molasses in a medium bowl until
    smooth. The glaze should be very thick and glossy but still pourable. If needed, add
    more milk or water ½-teaspoonful at a time until you get to the right consistency.

    7. Drizzle glaze over cookies and sprinkle with raw sugar and more pepper.

    A Healthy Holiday Recipe from the Pilot Light Chefs

    Sweet Potato, Collard Green, Pomegranate, and Sunflower Seed Salad

    Ingredients:

    2 Medium sized sweet potatoes, cut into small pieces
    1 Bunch Collard Greens or Curly Kale
    ¼ Cup Pomegranate Seeds
    ¼ Cup Sunflower Seeds, Toasted
    Canola Oil or Olive Oil
    Salt, to taste
    Pepper, to taste
    Apple Cider Vinegar, to taste
    1 Tablespoon Yogurt

    Method:

    1. Preheat oven to 400F. Toss the sweet potatoes in a small amount of oil, salt, and pepper. Roast in the oven or on the stovetop until tender.
    2. While the sweet potatoes are roasting, shred the collard greens or kale into small pieces and place into a bowl. Add the pomegranate seeds, sunflower seeds, and the sweet potatoes once they are finished roasting.
    3. Season the salad with salt, pepper, and apple cider vinegar to taste. This salad can be served right away or stored for up to 3 days. The salad can also be enjoyed hot or cold. If you want to enjoy the salad hot, just lightly sauté everything in a pan with the exception of the yogurt and pomegranate seeds. Add these ingredients at the end and serve immediately.

    Peach season is upon us and boy is it SWEET. Okay, so the exact parameters of peach season are a bit hazy, or as The New York Times puts it perfectly, fuzzy. But one thing is for sure, when it comes to summer peaches, when you get a good one, you know it. The freshest of the fresh, juiciest of the juicy, there are few flavors of summer better than this, and today we’ve got some recipes to stretch this sweetness even further. For the weeks when you just cannot get enough, here are some recipes to get your fill of the fuzzy fruit whenever the cravings come.

    Morning

    Get ready for some peach-packed pancakes that will have your crew rolling right out of bed with their little grumbling bellies. These Caramelized Peach and Oat Pancakes are totally gluten free and full of fiber to keep all the kids going during these nonstop summer days in the pool, at the playground, and of course, when you are out picking more peaches! Flavored will wholesome goodness, like ginger, honey, vanilla extract, and lemon juice, these cool cakes will be going like hotcakes, healthy hotcakes. Top ’em off with a drizzle of pure maple syrup, or better yet, even more fresh peaches. These fluffy stacks are so sweet you won’t even guess that they have NO SUGAR in them at all…oops…I guess I gave that secret away. But you’ll certainly have your little ones fooled and fueled for activities all day long. Not only will your dainty diners enjoy EATING these flap jacks, they will want to help you whip ’em up too. Part of the appeal? These are some of the prettiest pancakes we have ever laid our eyes on. Invite your little ones to take part in placing the peaches on top of each pancake as they start sizzling. Even something as simple as adding one ingredient along the way can make all the difference. Your timid tasters will see this beautiful breakfast, and knowing that they helped make it happen might make them more inclined to take a bite, even if the funky fuzzy skin usually freaks them out.

    Noon

    Let’s keep the fun rolling (literally) with this tasty lunchtime treat. These Grilled Peach Spring Rolls with Spicy Cilantro Pesto will liven up your next lunch party and turn that sad desk lunch into a party of its own. Now friends, I was skeptical of the spring roll approach at first too. I’m not always a huge fan of the sweet taking over the savory, but with that spicy pesto, plus that chili sauce for dipping, this dish brings a nice balance with every bite. But the best part of this summer peach specialty, it makes for the perfect light lunch on those days that are almost too hot to handle. When you are SO bored of salad, but a sandwich sounds too heavy, spring rolls are here to save the day! If you are like me, you may think of spring rolls as a dinnertime delight. But why wait until nighttime for these delicious noms & noshes. Put your peaches to good use and roll ’em up in these tasty lil’ tubes. And don’t forget to call all your little ones in to the kitchen to get in on the lunchtime action. They will love getting involved in every step of the process. Form your own family assembly line and assign each person their own ingredient to add to the package. Picky eaters in your crew? Customize it! One of the best things about snacking on spring rolls is that you can add (or not add) whatever you want. Taking your littlest one out for a lunch date? Maybe you ditch the spicy sauce and toss in a few more slices of the fuzzy fruit. Or maybe your kindergartner is courageous in the kitchen. Then slather on the spice and chow down! Whoever is hungry, these summer spring rolls are sure to make them happy.

    Night

    Peach pizza?? Have I gone insane?? Nope, not quite. Once you’ve tried this Peach, Basil, Mozzarella, and Balsamic Pizza…pizza night will never be the same. This recipe calls for homemade dough, and we are ALL about that. But if time is not on your side tonight and waiting around for dough to rise sounds like, well, a nightmare, don’t fret! There are some super delicious store bought options out there, like this Pizza Dough Mix from Simple Mills. Just add a lil’ oil, vinegar, and water, and you’ll have yourself a pizza party in seconds! Okay, minutes, but hey, 60 minutes to show time for a delicious AND nutritious pizza night does not sound too shabby if you ask us. And this pizza is good for more than just your weeknight indulgence. It will be a quick crowdpleaser and leave your guests thoroughly impressed, and of course so full they can barely feel feelings anymore, but isn’t that what pizza night is all about? And summer nights in general? All you really need is some good food, good friends, and maybe a spritz or two of bug spray. Just make sure you spray away from the feast. Nothing like a big ol’ mouthful of sandy sandwich at the beach, or bug spray soaked salad in the backyard.

    Something Sweet

    Put plain ol’ peach pie to rest and rev up the engine with these little lovelies. Hand pies are the perfect twist on an already delicious classic. And of course, who better to help out in the kitchen making these mini pies than your mini! Little hands are just what the dessert doctor ordered to whip up this one. From filling to folding, even your tiniest taste testers will be able to lend a hand in the creation of these Peach and Ginger Hand Pies. Enjoy these babies hot, cold, anyway you want ’em. You might even be able to get away with grabbing one for breakfast, because hey, hand pies, pop tarts, what’s the difference? I mean…there is quite a difference, but it’s summer after all, the season for extra sweetness and extra silliness. School will be back in session before we know it and we’ve got to take advantage of these extra hours of sunlight and extra fresh fruit filling our fridges. And don’t toss out this recipe once fall comes around! Hand pies can come in handy all year round. Swap in apples, even pumpkin, and you will have a dessert you can count on whether it is sunny or snowy.     Waste Not Want Not Wednesday: Beating the Berry Blues

    And finally…it happens. August arrives. We are not quite there yet, but the final month of freedom is just around the corner, and we are filled with…ALL THE FEELS. Of course, we are beyond excited for back to school season to begin. We miss YOU, our stellar students, teachers, and parents during these summer months. But ya know…it’s summer! Who doesn’t love a little more time spent out in the sun…far, far away from anything with the words home + work, combined into one?? With the end of sweet summertime drawing near, there is something else pretty sweet that is still in full swing. What is this marvelous magic we speak of…? BERRY SEASON. Blackberries, blueberries, boysenberries, oh my! Your fridge is filling up fast and you are entering struggle city. What to do with all this deliciousness?? You don’t want them to go to waste, but the whole family is getting real sick of eating handfuls…armfuls, of berries for breakfast lunch and dinner. For these final few weeks of summer, when berry fever begins to take its toll, check out these rockin’ recipes to reduce that waste and whip up something special using up every last strawberry in sight.

    Spread it

    Making your own jam. Sounds daunting, we know. I thought so too, before I actually DID IT. Not only did I make some damn good raspberry jam on my own, I taught other people how to do it too! And let me tell you…INSANELY EASY. Like, insane. This is if you ditch the whole pectin part, which I think you totally can, and should. Unless you are making jars and jars and jars to last you all year long, keeping it simple is the way to go. Besides, what is pectin anyway? Just your average old heteropolysaccharide…yeah…we’ll save that chat for another time. For now, try out this Triple Berry Quick Jam that you can make using just about any berry under the summer sun. You will have something sweet ready to spread on your bread by breakfast tomorrow, or even dinner tonight. And talk about kid friendly food! Making your own jam is just about the best way to get your little ones involved in the action, and really feel like they accomplished something HUGE. They might just be smiling from sunburned ear to sunburned ear when they unzip their lunchbox and find that sunbutter and jelly sandwich you packed them for camp lunch…made with their very own homemade jam!! They might also be more open to trying out new flavors if they make it themselves. Raspberry seeds freak them out? In jam form, they might just dig it! Blueberries too mushy for them to handle? Sautée them with a spoonful of sugar and spread it on some toast…it could become their new favorite fruit!     Square it

    I don’t know about you, but baking in the hot summer heat…not my favorite past time. I mean, come on, I’m already sweaty and sticky from just surviving this 90 degree day, why would I want to wait around in front of a 400 degree oven for my cookies to bake!? Enough with those cookies and cakes, summer is the time for quick fixes and sandy beaches. And nothing makes for a quicker sweet tooth treat than something that requires NO BAKING at all. These No Bake Cherry Chia Crumble Bars should definitely show up on your next nighttime cookout menu. I know, I know, cherries? I thought we were all about berries today. That’s the great thing about this recipe! Just about any fruit will do. Strawberries gettin’ stale? Perfect. Throw ’em in this mix. Blackberries lookin’ a little blah? Steer clear of the trash and toss them this way. Basically, any berry ya got, chances are they will work in bar form just fine. All you really need is some sort of crunchy, crumbly topping, and plenty of tiny helpers to do the mixing and mashing, and dessert is served! Oh, and did I mention those Cherry (or berry) Chia Crumble Bars are totally vegan AND gluten free? Well, yeah, they are. So while you are saving your environment by saying buh-bye to food waste, you are also saving some animals in the process. Guilt free goodness at its best, all summer long.

    Save it

    Okay, you have made enough berrylicious bars and jams to feed a family…of ten. Now what? Well my friends, when all else fails, or when you are just ready to take a break from all that berry bliss, it is off to the freezer they go! Hold up, am I seriously telling you to take all of those leftover luscious berries, fresh from the farm, juicier than fresh pressed juice itself, and just…freeze them?? Why yes, yes I am. Because what’s better than getting a little taste of that freshness long after summer has ended!? Just imagine…you find yourself craving something sweet on a cold winter’s night. You are all tuckered out from the Christmas cookie craze, and if you have even one more sip of peppermint hot chocolate you might just, well, it won’t be pretty. In fact, you are in the mood for something on the chillier side. You open your freezer and all that stares back at you is that lonely last bit of boring vanilla ice cream that has been in there for who knows how long. That just won’t do. But wait! You remember your stroke of genius back in July, when you bagged up some blueberries from the market to save for a rainy (or snowy) day. Within minutes you have transformed that sad scoop into something Michelin Star worthy…or at least worthy of a second spoonful. Just pop those fresh picked berries into the microwave, pour on that ooey gooey goodness, and you’ve got an ice cream sundae that tastes like summer. And nothing tastes better than that.

    So there ya have it. You never have to let another berry go bad, and you can always count on having something tasty to munch on during these final summer months.

    Waste Not Want Not Wednesday: Parchment Party

    We are back for another Waste Not Wednesday and we promise it will be as delicious as the last! Today we are taking you from A to Z, through just a few of the MANY delicious ways to liven up those lackluster veggies. We are talking about one of the easiest, tastiest ways to take dinner from bland to beautiful, and the perfect way to use up that final bunch of broccoli or cupful of carrots. Preparing your food in parchment paper is where it’s at. This method was brand new to me just a few months ago, but let me tell you, I have never whipped up chicken so quickly and calmly. Not to mention the results were super flavorful, and, yes, I gotta that word that so many people hate…MOIST. So read on if you want to discover the most delicious ways to make your next meal full of flavor and totally free of food waste!

    Asparagus

    You roast it, you sautée it, maybe you even grill it, but you are getting BORED of this veg fast, and feeling uninspired in the kitchen. Get out of that veggie-roasting-rut with this fun and flavorful “Asparagus and Chicken en Papillote” from Leslie Beck, RD. This has got to be one of the simplest solutions for a summer dinner that we have seen in quite a while. This recipe also calls for carrots for some extra vitamin A action. When it comes to veggies, the more, the more, the more the merrier! Get ready for some juicy chicken and just-as-juicy asparagus. Plus, you can sub in your own protein pick if chicken ain’t yo thang. Preparing veggies in parchment is also a great way to get your little ones EXCITED about eating their greens! Invite them to help you fold up the paper properly, almost like an art project. Once they prep that lil’ pouch, tiny hands are just the right size for stuffing these savory stockings. You can even make the cooking process sound magical (because it really kind of is). Tell them all about this super special paper that transforms boring old veggies into something delightful and delicious for dinner!

    Zucchini

    Okay, I’ll admit it, I have a love-hate relationship with the zukes. I have gone weeks eating it every single day, tossed in a pan with some EVOO and turmeric, roasted and toasted until perfection…I have also gone weeks without taking a single bite of the stuff, never craving it, never even giving it a second thought or glance in the grocery store. But parchment paper cooking just might make me give it another shot. This lil’ bundle of joy is filled with fresh cod, tomatoes, and you guessed it, zucchini. TAKE NOTE, the total time to take this bad boy from start to finish, from table to tummy, is 17 minutes. Yep, less than 20 minutes to have a delightful dinner right at the tips of your fingers and tongues. Of course, if you really can’t get down with this summer squash, feel free to choose something else that makes your mouth water…as long as it’s GREEN. Even some simple spinach, kale, or collards will work nicely in this parchment packet creation. And I mean, you don’t even have to stick with the cod. Any other fish of similar taste and texture will do the trick. Tilapia and halibut are always good options, and for all you fish-free friends out there…try tofu on for size!

    All the rest

    So, your fridge is still full of veggies that are on their last legs. You are feeling, well, to put it bluntly, L.A.Z.Y. The Sunday scaries are creeping up on you and you want to use up all the rest of that produce before you restock for the new week tomorrow. But the last thing you feel like doing is tending to a hot pan over a hot stove on a hot summer day. GUESS WHAT. Pull out that parchment paper, baby! Spice it up, wrap it up, cook it up. Dinner will be on the table before you even have time to panic. If you don’t believe us…take it from this dude, Mario Batali, and his Summer Vegetables in Cartoccio (a paper bag). You can basically swap in anything and everything from your fridge for this super simple recipe to work wonders. Why waste that last handful of green beans and lone corn on the cob? They may not be able to stand on their own for your dinnertime veg, but tossed together as a pair in some parchment, we think they’ll manage just fine.

    Do you have some greens sitting in your crisper that have gone from gorgeous to gross?? Don’t go throwing them away just yet! Pesto season is upon us. If you didn’t already know that, then hop on board and enjoy the ride! Now is the perfect time of year to transform those luscious leaves into something spectacular. I’m not just talking about any ol’ pesto. We’re not stopping at the basic basil variety (but don’t worry, we will get to that later). Today it’s time to learn about some new takes on your favorite summer sauce that will put those wilting greens to good use!

    Carrot Top

    That’s right. We are starting right at the top. The next time you buy a big beautiful bunch of organic orange gems, save the stems! Carrot tops are one of the most underrated parts of any veg out there. I’ve heard of saving celery stalks and cheese rinds for soups and stews, but it was not until recently (thanks to some of our very own Pilot Light Chefs!!) I discovered carrot tops are good for more than just composting. Our new culinary director, Justin Behlke, recently taught students in Christie Friar’s class at Palmer Elementary how to make some easy (and delicious) carrot top pesto. And we couldn’t forget to share the love with our wonderful teachers. Chefs and owners of Honey Butter Fried Chicken, Christine Cikowski and Joshua Kulp, whipped up some springtime carrot top pesto at our professional development session back in April. They also shared ways that they work to combat food waste in the HBFC kitchen by using every part of every food and using their repurposing magic to turn what some might see as trash into delicious treasure! This insanely easy to make (and easily to customize) carrot top pesto recipe from Don’t Waste The Crumbs is the perfect plain and simple way to use up those tasty tops. Toss in whatever herbs and nuts suit your fancy, and voilá, dinner is served! Or lunch…or breakfast really. This stuff is delicious dolloped on just about everything. Pasta, pork chops, pancakes! Okay, maybe not pancakes, but if eggs are your morning go-to, add this to the mix ASAP.

    Beet Green

    If you are anything like me…you love beets. I mean LOVE. Boiled, pickled, roasted, raw…well…maybe not raw, but if they are on the menu, chances are, I am ordering them. True story, I once bought not one but TWO giant, I mean GIANT, buckets of beets at the farmer’s market because they were on some super spectacular sale and I just could not help myself. I lugged my lovely beets home…and counted them…96. Ate every. Single. One. Over the course of a few weeks of course. As magical as this beet-tastic adventure was, I wish I knew at the time that I could use the tops of my beets to make another one of my favorite foods, pesto! This beet green pesto from Plan to Eat is creamy, dreamy, and delicious! What makes this particular pesto creamier than all the rest? One tiny but mighty ingredient…grass fed butter. That’s right, BUTTAH. Not too typical of a pesto sauce, but boy does it make all the difference. Don’t fret, the bit of butter is more than balanced out by the beet greens themselves. Loaded with antioxidants for energy, and fiber to fuel your long summer days and night, these greens will do just the trick, and the butter will give you a lil’ extra boost to beat that summer heat.

    Classic Basil

    If it ain’t broke, don’t fix it. This statement certainly does not always hold true, but in this case, the case of a damn delicious summer sauce packed with pine nuts and fresh basil, the truth is in the tasting. Remember way back when, exactly one year and one day ago today, when we reminisced together about the joys of childhood and trying new foods, my favorite being that gooey green sauce that I fell in LOVE with? Yeah, we’re talkin’ about it again. Good ol’ green, garlicky, basil-based pesto. Nothing else needed. Nothing at all. Except of course some pasta or protein to go underneath. Sometimes, simple is best, like with this Basic Pesto from The New York Times Cooking section. This is the best kind of recipe, because you can count all ingredients on just ONE HAND. The simple test to see if any recipe, or any food at all, is truly “natural” and “healthy”?? Count those ingredients!! Ten and under is good, five and under is GREAT.

    If you start to lose touch with yourself and where your food is coming from, just take a step back and remember those tried and true words of wisdom from author and activist, Michael Pollan,

    “Eat food, not too much, mostly plants.”

    And then remember the words of another foodie favorite of mine…that’s right…you guessed it, Ina Garten!

    Berry Bonanza: savory stuff

    Berries are some of the sweetest summer treats to find at the farmer’s market. But they are good for more than just desserts. This one goes out to all of you born WITHOUT a sweet tooth. Personally, I cannot relate to you…at all. I have quite the insatiable sweet tooth. It is just a natural gift I have, lucky me. If you prefer the salty things in life, then berries might come more in handy than you would expect this summer. Especially when you find yourself with more than you bargained for. Maybe there was some great deal on them at the market and you just had to have a dozen pints of blueberries. You think, hey, I love blueberries, I will totally be able to eat all of these before they go bad. Snack times get away from you and lunch plans change, and before you know it five days have past and you are only halfway through that bucket o’ berries. Before you go tossing them in the trash, wait, stop, don’t! For those berries that are past their prime and are lacking that fresh-off-the-vine flavor, these savory berry recipes are here to save the day.

    Baked

    That’s right, bake with those berries. We’re not talking about boring old blueberry muffins or strawberry shortcake. We’re talking about CHEESE. Yeah, BAKED CHEESE. Nothing screams “high of 90 degrees with plenty of sun and 80 percent humidity” like hot melty cheese. Okay, it might not sound THAT appealing at the moment. But for the cooler summer nights, when you are entertaining a crowd and craving something decadent, this Baked Feta with Rosemary Blackberry Compote will TOTALLY hit the spot. It is best served super hot, but I mean, it’s cheese. And it’s smothered in fresh berry-honey-lemon loveliness. It’s gonna taste pretty damn good no matter what temperature it is.

    Pickled

    Now let’s cool it off with something just as salty but a bit less steamy. I’m talkin’ about one of the saltiest snacks out there…not chips or cheese puffs or anything that comes out of a plastic bag. I’m talking’ about PICKLES. Homemade pickles to be specific. Homemade pickled blueberries to be more specific. Pickled blueberries, you ask? Yes indeed. These Pickled Blueberries with Rosemary Sprigs might just be one of the most interesting things you snack on all summer long. This is also a super fun and fascinating way to get your lil’ munching monsters more involved in the kitchen. You can tell them all about pickling and preserving foods, just like we’ve done in a few of our Pilot Light lessons! They can help stir all of the ingredients together, and practice a bit of patience while you wait one whole week until the pickled berries are ready to EAT. That part may prove difficult…but remember, you can keep chowing down on fresh berries in the meantime.

    Salsa & Ceviche

    Finally, for those backyard barbecues and dinner parties when it is truly too hot to handle anything above room temperature, berries always make a great addition to some salsa or ceviche, or both! This scallop and blueberry ceviche is so simple an so satisfying. Berries and cream…berries and chocolate…berries and…fish?? Yup. It works. It just works. Something about the textures, the flavors, the freshness of the ingredients, it can make for the perfect palate cleansing summer dish. Don’t let the main ingredient, scallops, intimidate you. Scallops can be a doozy to cook, the good thing here is, you don’t need to cook them! It’s ceviche, duh! All ya gotta do is marinate, mix, and munch.     We are already headed into our second week of June. Crazy, right? The sun keeps getting hotter and hotter and we are getting hungrier and hungrier. One of my absolute favorite childhood memories is going blueberry picking. Well…not so much the picking part…but the EATING part. I would pick as many as my little hands could handle, but the real fun came as I followed the older family members around, ya know, helping them out, making sure their buckets didn’t get too heavy by eating nearly every berry they dropped in. As you might have guessed, Blueberries for Sal was one of my favorite books. I admired her dedication, eating every single blueberry she picked, right there on the spot, not letting a single one go to waste.

    But why stop at blueberries? Berry season is just around the river bend, and we could not be more excited. Sweet little gems of all colors, shapes, sizes, and flavors are coming soon to a farmer’s market near YOU! No, this is not an infomercial, we are just really, really excited.

    We could probably go on for hours about the health benefits of all the berries under the sun, but we won’t. We’ll just give you one of the MANY perks of this produce: the effect that eating berries can have on the brain. That’s right, the BRAIN. An incredibly important part of the body that we often forget about. I mean, we don’t forget about it completely, it’s always there, helping us do everything everyday. But when we think about the food we eat, the food we feed our children, we often only think about how that food impacts the rest of our bodies. Our muscles, our skin, our hair. Let’s not forget about the insides of those beautiful bodies! We can eat plenty of protein to sustain us in those long gym sessions, but if we not feed our brains properly, we might just end up falling flat on our faces when that treadmill starts to speed up.

    When we think about fueling up for activity, whether it is a long day in the office or outside in the sun, we might jump right to the boring stuff, the less-than-delicious stuff. Green vegetables and nothing else. Nuts and seeds and more nuts and seeds. Of course we LOVE our green veggies and plant-based protein sources, but come on it’s summer, we cannot forget about dessert. Especially when that dessert is packed with vitamins, minerals, phytonutrients, flavanoids…flavanols…you get the idea. Here are just a few fabulous berry-based recipes to start off summer on the right foot, the sweet foot.

    This super simple Strawberry Sunflower Smoothie requires only FIVE ingredients (plus a couple ice cubes) and it will keep you cool and calm all summer long. Sunflower seeds are loaded with lovely nutrients, including magnesium, known to help you relax and rest easy all through the night. Combined with sweet strawberries, beautiful banana, a dollop of yogurt, and a splash of milk, this sun-butter smoothie will get slurped up in seconds. Plus, not only is this baby naturally nut free, it can be made dairy free too. Perfect for playdates with anyone and everyone, no matter what their dietary differences.

    These Simple Blueberry Frozen Yogurt Pops will be a popular after school snack time treat, we can pretty much guarantee it. Unless your little ones really really really don’t like blueberries…but even so, you can sub in any berry they want and make it more to their liking! If you thought that five ingredient smoothie was easy, these THREE ingredient popsicles will make your day. Blend up your blueberries, Greek yogurt, and maple syrup for extra sweetness, and there ya go, you’ll have a freezer full of love for a week…or at least a day, these pops will go quick.

    Swap out those stale old raisins for some farmer’s market fresh raspberries in these ravishing red Raspberry Oatmeal Cookies! Full of fiber from the oats, and sweetened with inflammation fighting honey, these cookies aren’t really cookies at all…okay, they totally are, but they are also totally healthier than most granola bars or cereals you will find out there. Those things can be loaded with hidden, or not so hidden sugars, and they will leave you crashing and fighting cravings for the rest of the day. These cookies are definitely something sweet, but they will also keep you full and focused for the rest of your afternoon or evening. Not only can honey fight off inflammation, it can keep allergies at bay as well. It is no miracle sweetener, but because honey contains trace amounts of bee pollen, it can actually build up your tolerance to those nasty allergy triggers and calm all that coughing and sneezing.

    We’ve covered the sweet stuff when it comes to chowing down on cherries, but before you dive into dessert, let’s serve up something scrumptious for dinner. Cherries are one of the sweetest fruits around, so you might not think to add them to your next savory dish. But when combined with some good ol’ olive oil, farmer’s market fresh herbs, and maybe a pat of butter for good measure, cherries can be the perfect addition on your plate, and quite pleasing to the palate. We’ve got some SUPER quick and easy recipes for you to try at your next dinner party, dinner date, or just a boring weeknight when you need something good to eat at the end of a long, hot day.

    Before we get cookin’ here are some tips and tricks to help you choose the best bunch of cherries, and keep them fresh and flavorful for as long as possible. The main takeaway here is to focus on color, and keeping them cool. If you are getting your fruity fix at the farmer’s market, this task will be pretty easy. You’ll have the best resource available right there at your fingertips, the farmer! Chances are, if ya grow the cherries, ya know how to pick ’em and store ’em.

    For entertaining the masses, big mouths and small, this Cherry Crostini will do just the tasty trick. There are basically three small steps between you and a delicious dining experience. Slice up some bread. Sauté some cherries. Spread on some ooey gooey cheese. This recipe calls for goat cheese, and if that’s your jam, go for it. If you have a handful of little ones enjoying this appetizer too, you might want to opt for something a little less, well, goat-y. They might even like to just munch on that fresh baguette all by itself, but encourage them to taste a bite of the bright red stuff smothered on top. It will kinda sorta look like an open face PB&J, just all dolled and doctored up, so they might surprise you with their adventurous eating.

    For another quick fix, one that would work well as an appetizer or side dish, or even an entrée for the smaller stomachs to feed at the table, try this Cherry Compote on for savory size. No, you don’t get to eat a bowlful by itself with a giant wooden spoon. I mean, you can…but this stuff is best served over your favorite grain, like couscous or quinoa. Toss in some nuts and herbs of your liking and get to cooking. This is a great one for the kids to help with. They can totally tear up some herbs with ease and be in charge of stirring that pot until those cherries start to get all mushy, gushy, and ready to EAT.

    Now for your main meal starring the one and only summer cherry, this Chicken with Cherry-Wine Pan Sauce will have you drooling before dinner begins…which is pretty soon…because this recipe can be whipped up in just 20 minutes. Roast some veggies or toss together a quick summer salad and dinner is DONE. This meal might make its way on to your go-to dinner dishes because it is just that simple and just that GOOD. It is also easy to customize for the picky eaters in your family. Serve the chicken up plain without the sauce, or pour on some extra for your cherry loving loved ones.

    You are finally fully prepped and prepared for cherry season. Pop them like candy, bake them into a cake, cook them up for some sweet ‘n savory chicken. Any way you eat ’em, do it fast while supplies last. Soon enough peach season will be upon us and our fridges will be stocked with a new fresh fruit…but I guess we can’t complain about that.

    Happy June to one and all!! May is already miles away in our rear view mirrors, I mean seriously, where did the time go?? Summer is already flying by way too fast, but with a new month comes new opportunity…a new opportunity to EAT SOMETHING DELICIOUS. National Donut Day is done, and The Taste of Chicago is still one month away, but who needs fried dough when we have FRESH FRUIT?? Okay…if you turn to the person next to you right now, in the office, on the bus, wherever, chances are they might go grab something gooey & chocolatey before they reach for that apple…but that doesn’t mean they won’t change their minds!

    I think one of our bright & brilliant fifth graders said it best: “It’s hard to convince someone to eat lettuce instead of Cheetos, but with time it can be done.”

    I mean, come on, you really can’t argue with that logic. Today we are talking about one of our favorite fresh fruits of the season, perfect for baking and naturally sweet. Today we are talking about CHERRY SEASON. We are right in the middle of it, and chances are the next farmer’s market you meander through will have buckets and baskets of cherries lining the aisles.  If they aren’t showing up at your local market quite yet, don’t worry, you will most definitely be able to pick some up at the good ol’ grocery store. They might even be on sale! So your cart is loaded up with this antioxidant-full fruit, but now what? Cherries are great on their own for a simple and satisfying after school snack (or a snack at any time of day, really), but what about when you buy just a few too many to handle? They sit in the fridge for a few extra days…growing a bit too soft and ripe for munching…but just right for BAKING.

    Your go-to for summer sweets might be blueberries or peaches, and of course we LOVE everything about that. But cherries are an often overlooked farmer’s market find that can make a great addition to your next dinner party dessert. Check out this recipe for a cherry crumble that is easy to make, and even easier to EAT. This one only serves about four people, so you might wanna double up on this baby if you are expecting company…and keep in mind that people will probably want a second helping. This recipe is totally gluten AND dairy free, and it is sweetened only with maple syrup. Of course there are other versions out there packed with butter and sugar, but if you get yourself a good, fresh batch of fresh cherries, you really won’t want to smother them that much! Whip up this crazy crumble using some oats and almond meal for a light summer sweet treat that will polish off your palate perfectly.

    These double chocolate cherry oatmeal cookies, that’s right, DOUBLE chocolate, are surprisingly pretty healthy, and to nobody’s surprise, damn DELICIOUS. First of all, this recipe calls for dry cherries, but you can chop up some fresh ones to toss in there and add an extra sweet kick. Sweetened with some honey, this recipe is also sugar free and super filling thanks to another special ingredient, almond butter. The oats and almond butter will fill you up fast so you won’t have to worry about reaching back into the cookie jar for seconds…or thirds…at least we hope not.

    If bakin’ ain’t your thing, don’t leave the kitchen yet! Try this roasted cherry parfait that is perfect for the nights when you need a quick dessert fix for one, or a whole crowd of hungry kiddos. Start with your protein-packed Greek yogurt base and top it off with some healthy fats from the nuts of your choosing. And don’t forget that even on their own, cherries bring a whole bunch of health benefits to the table, including reducing inflammation and being low on that stubborn glycemic index.

    So the next time you are ready to whip up something using your favorite summer berries, remember that cherries are a great option to go to in these hot summer months. A lil’ sweet, a lil’ sour, and a whole lotta deliciousness. Bon Appétit!
