    Jeff Smart’s interest in Pilot Light stems from his work in the food & beverage industry as well as an interest in education and the approach the organization takes to supporting and investing in teachers. Jeff is currently a Partner at Shore Capital, a lower middle market private equity investment firm based in Chicago, IL with more than $12 billion in assets under management. He focuses on working with family and entrepreneur owned food & beverage companies to support growth, capital investment, and transition to the next stage of scaling and infrastructure development. Shore’s food & beverage group has made a total of 13 investments over the last 6 years across the supply chain and focuses on surrounding these companies with talented operating partners with deep experience and contacts in the industry.

    This Standard is very important to my day to day and I am passionate about furthering that mission. 

    A favorite food memory:

    I am constantly in awe of the universal connection of food as a common thread throughout different cultures, countries and personalities. Most distinct memory was during a college trip to provide economic education in Nicaragua and how a shared meal built trust for a productive few days.

    Dr. Disha Narang is a leading endocrinologist, obesity, and culinary medicine specialist, and Director of Obesity Medicine at Endeavor Health System in Chicago.

    Dr. Narang is extremely passionate about combatting our epidemic of obesity and diabetes through targeting our food environment – this starts with educating and empowering our children, patients and communities to prevent long-term metabolic disease.

    Dr. Narang has been featured in several national and global media outlets, including the BBC, CNN, Wall Street Journal, and NPR, speaking on the obesity epidemic, diabetes, chronic medical weight management, and our food environment.

    Favorite Food Education Standard: FES #5 – Food impacts health. 

    By understanding how food impacts our health, we can actively make positive and informed food choices, which also in turn impacts those around us. Creating a positive relationship with food can impact a lifetime of health.

    A favorite food memory:

    I grew up overweight. As a first generation immigrant, my eating habits evolved in a way to help me fit in. This also resulted in weight gain. It was one of my middle school teachers who really opened my eyes to nutrition. This completely changed the way I thought about my food environment, and changed the trajectory of my life.

    Why I Support Pilot Light:

    Rita Leary

    Rita Leary has a teaching career that has spanned 3 decades and 2 continents from suburban Wisconsin to rural East Africa to inner-city Chicago. Her entire journey has been flavored by personal connections to students and families through food.  This doorway to human interaction is also the threshold to health and human agency. There is joy in bringing young learners to the realization of their great power in the nutritional choices they make. 

    Together, she explores the vast and valuable cultures that make up their collective student body. Students learn the value, purpose, and significance of food. Students plan and execute healthy snack menus. Students reflect on the nutritional choices they make each day. Ashburn students are whole people, and she welcomes the opportunity to reach them on the academic, social, emotional, and nutritional levels.

Shilpa Gadhok joined Pilot Light driven by a desire to inspire for-profit businesses to amplify their impact by aligning with organizations dedicated to meaningful socio-economic and environmental change. With a deep-rooted belief in the transformative power of education and food system reform, Shilpa found that Pilot Light’s mission harmoniously combined these passions into one powerful cause.

    As someone who believes in the responsibility to prepare future generations for their roles in addressing society’s most pressing systemic issues, Shilpa sees food as a cornerstone of this preparation.     Favorite Food Education Standard: Can’t Choose!

    All of the Standards resonate with me. But if I had to narrow it down, I would say 1, 2, 3, 5, and 7. They resonate for all of the reasons I’ve stated above 🙂.

    A favorite food memory:

    My mom’s Butter Chicken and Chole are the talk of the town in our suburb of Maryland where I grew up. No one else makes it quite like her, and to this day, the flavors behind these dishes ooze feelings of warmth and comfort in me. My family hails from India and even though I was born and brought up in the US, the food of my motherland has been a cornerstone in our home. Butter Chicken or Chole were only made when guests came to visit or we had a gathering at our home. They were special dishes my mom would only cook up when company was over, so naturally, I loved it when people would visit us. Now, when I go home every few months, she makes them for me, and it’s like a warm hug to welcome me back.

    Why I Support Pilot Light: 

    I believe it’s our responsibility to prepare future generations to tackle society’s most pressing issues, and food is a cornerstone of that preparation. Our food system impacts the health of our bodies, the environment, and the economy. Through Pilot Light’s educational initiatives, I’m passionate about inspiring young people to make informed choices about their health, understand food’s environmental impact, and recognize its socio-economic implications. By fostering this awareness, we’re equipping students to take an active role in shaping a healthier, more sustainable future—creating a ripple effect that extends far beyond the classroom.

    Ty Fujimura has served on Pilot Light’s Advisory Board for less than a year, following several years of involvement as a philanthropic supporter of Pilot Light events and fundraising initiatives. His relationship with the organization began through charitable contributions and continued engagement, driven by a shared belief in the power of food education to strengthen communities and improve long-term outcomes for students.

    A seasoned Chicago hospitality veteran, Ty brings a broad breadth of experience across concept development, operations, brand building, and strategic growth. Over the course of his career, he has helped develop, launch, and operate a diverse portfolio of hospitality concepts ranging from neighborhood-driven establishments to nationally recognized destinations. His work reflects a balance of creativity, operational discipline, and a deep understanding of how hospitality can serve as a platform for connection and positive social impact.

    Ty’s leadership approach is shaped by his education at Culver Military Academy and DePauw University, where he developed a strong foundation in discipline, service, and collaborative leadership. These values continue to guide both his professional pursuits and his philanthropic involvement.

    The idea that food connects us to each other resonates deeply with me because it reflects how I was raised and how I continue to experience food today. Growing up on my family’s farm, food was never just about nourishment—it was about shared work, shared meals, and shared responsibility. Growing, cooking, and preserving food brought people together across generations and created a sense of belonging.

    That same connective power is what draws me to Pilot Light. The organization understands that food can be a bridge—between cultures, classrooms, families, and communities. By teaching students how food connects us, Pilot Light helps them see themselves as part of something larger, fostering empathy, collaboration, and respect. That mission aligns closely with my own belief that food is one of the most powerful ways we build relationships and strengthen community

    A favorite food memory:

    I was raised on my family’s farm in Indiana, where food was a way of life, not just something on a plate. We grew nearly everything we ate, and each season came with its own rhythm—planting in the spring, tending through the summer, harvesting in the fall. The kitchen was always full, with jars lining the shelves from canning and pickling, preserving the work of our hands and the stories of the year.

    Food was meant to be shared. Meals brought together family, friends, and neighbors, and everyone had a place at the table. Those moments taught me that food carries memory, meaning, and connection. That early relationship with growing, cooking, and sharing food shaped my lifelong love of dining and my belief that food helps define who we are and how we care for one another.

    Why I Support Pilot Light: 

    I support Pilot Light because it recognizes food as a powerful tool for education, connection, and opportunity. Food has the ability to teach life skills, spark curiosity, and build confidence, especially when students understand where it comes from and how it connects to their lives. Pilot Light brings learning to the table in a way that is inclusive, practical, and deeply human. To me, Pilot Light represents the intersection of nourishment, education, and community—and the belief that when we invest in how young people learn about food, we invest in their future.

    Erin Dayrit has served on Pilot Light’s Advisory Board for 1 year, after previously joining the Associate Board in 2023. She is a Senior Designer and Senior Associate for IA Interior Architects where she leads design strategy for workplaces across the nation supporting client’s business, workflow and brand in the built environment and focus on incorporating inclusive, sustainable design into projects. Erin has a B.S. in Interior Design from the University of Wisconsin-Madison and a Master of Interior Design from Harrington College of Design. Originally from Wisconsin, Erin has resided in Chicago for over 13 years and lives in Roscoe Village with her husband and young son. She enjoys trying out new recipes, prioritizing fitness and exploring Chicago’s neighborhoods through restaurants and music venues.

    Favorite Food Education Standard: FES #3 – Food and the environment are interconnected. 

    “Food and the environment are interconnected” is the standard that resonates with me the most. As a designer, I’m constantly evaluating how the built environment can be inclusive of all abilities and positively affect the people within it while reducing negative environmental and social impacts. Food is a part of this greater ecosystem and interconnection of all living things. The decisions we make have a chain effect to us as individuals, to our families, to our communities and to our planet.

    A favorite food memory:

    My mom instilled a love of food in me from an early age, whether it was helping her cook family dinners or baking for our annual holiday cookie exchange. I cherished those opportunities to spend time with and learn about food from her. The act of cooking gave me responsibility and the art of sharing food brought our family together. Those same sentiments I carry on with my own family today.

    Anthony Dayrit has served on Pilot Light’s Advisory Board for 1 year, after previously joining the Associate Board in 2023. Anthony is a Director at BMO Sponsor Finance, BMO Financial Group’s private credit / direct lending platform, where he originates, underwrites, and executes financings for private equity-backed transactions. He has a B.A. in English from the University of Notre Dame. Originally from Kansas City, Anthony has resided in Chicago for over 15 years. He lives in the Roscoe Village neighborhood with his wife and young son. In his free time, he enjoys exploring Chicago’s different neighborhoods by trying new restaurants, attending concerts, and training for the next fitness competition / race.

    “Food impacts health” is a standard that truly resonates with me. It is not always easy or top of mind to think about how our food choices impact health, but it is a value I try to uphold in my daily life. As we are only provided one body and finite amount of time, it’s important to understand how what we consume can have a major impact on our quality of life.

    A favorite food memory:

    My parents are originally from the Philippines and immigrated to the United States more than 40 years ago. Enjoying food together as a family is a core value in Filipino culture. One of my favorite memories growing up is my parents cooking a traditional Filipino breakfast on the weekends – eggs, sinangag (garlic fried rice), corned beef hash, and longganisa (sweet sausage).

    Why I Support Pilot Light: 

    I support Pilot Light as the organization’s mission to increase awareness of food education resonates with my core values. Living a healthy and balanced lifestyle has always been important to me. Food should be something we enjoy, but also viewed as valuable fuel for living our daily lives. Understanding how food impacts us internally and externally is not always something that we think about, but it plays a critical role for each person.

    Lindsay Dansdill has served on Pilot Light’s Advisory Board for four years. She first became involved after attending Pilot Light’s annual Feed Your Mind Gala and was beyond impressed by the grass roots initiative and dedication to the oft-ignored topic of nutrition inequity. The Pilot Light mission perfectly melded her love of food, cooking and passion for childhood accessibility to food based education. She is beyond excited about the growth of Pilot Light and its future endeavors. Lindsay works as an attorney by day, serving Scandinavian companies doing business in the U.S. as well as established U.S. entities. She attended the University of Michigan and Loyola University School of Law.

    Favorite Food Education Standard: 

    All of these standards work with the goal of allowing food to bring varying communities together as opposed to furthering dividing a diverse and increasingly connected world.

    A favorite food memory:

    Lindsay’s first introduction to the food world was brought to her through side hustles at various restaurants throughout her college career. While working as a server, she eagerly spent time in the kitchen, learning how to perfect a vinaigrette and discovering the beauty of cooking a beautiful meal and improvisation while on a budget, skills she hopes to pass on to her young daughters.

    Why I Support Pilot Light: 

    The Pilot Light mission demonstrates that eating well should not simply be a coveted hobby for the wealthy but an opportunity for everyone of all ages to learn, gather and fuel their bodies through accessibility and creativity. I am beyond grateful to the Chicago chefs who have devoted time out of their incomprehensively busy schedules to support this very important cause.

    Kyle Curry has served on the Pilot Light Advisory Board for 2 years. Kyle was a fundraiser in Chicago for a decade in the youth education space, at which time he became familiar with Pilot Light. Since 2015, he has consulted with nonprofits on their data and technology and has collaborated with Pilot Light on several projects.

    All of the 7 Food Education Standards resonate with me and are very important. Food connects us to each I think sums it up beautifully.

    A favorite food memory:

    For my 30th birthday my father took me to our first tasting menu – Moto in Chicago. It was one of the last meals we had together. He was amazed food could be so creative, and he said every course we were trying was a new memory we’d have forever.

    Food education means equity. The more we can educate about food, the stronger our community becomes.

    Neilav Bhatt has served on Pilot Light’s Advisory Board for 8 years. They first became involved when Neilav reached out to Alex Desorbo-Quinn in search for an opportunity to support an organization that aligns with his passions (kids + food). Neilav is an experienced Healthcare Finance and Technology leader who has scaled and grown several organizations. Neilav’s expertise has helped organizations meet their financial goals by partnering with clients to realize maximum value of their products. Neilav grew up in Naperville, IL, went to Loyola University receiving his Bachelors in Biology and Business Administration and then attended Washington University in St. Louis and received his Masters in Health Administration.

    As I’ve built my career in healthcare I understand the opportunity areas in our healthcare system. I believe we need to be proactive and not reactive in our healthcare and food is the core to the medicine our bodies need.

    A favorite food memory:

    Neilav and his family (wife Priya and daughters Alina and Naiya) love exploring the world focusing on food destinations. We recently went to London and Paris falling in love with the food culture. Our honeymoon took us to Thailand, Vietnam and Cambodia where we went very deep into the street food scene. I love teaching my daughters about the power of food and learning how to make decisions that will fuel our body.

    Why I Support Pilot Light: 

    Pilot Lights mission to support students as they learn and advocate for informed choices resonates with what I believe is important. Not only is the Mission, Vision and Core Values align with my personal beliefs but the people that make up the organization are strong advocates for food education and are constantly pushing the boundaries and dreaming BIG!!!
