    October Update: Let’s Move!

Since its birth in 2010, Pilot Light has been looking to Michelle Obama’s Let’s Move Campaign for endless inspiration. The Campaign, also started in 2010, aims to improve the health and wellness of children in our nation, through proper nutrition and physical education. As stated on their website, “Let’s Move! is a comprehensive initiative, launched by the First Lady, dedicated to solving the problem of obesity within a generation, so that children born today will grow up healthier and able to pursue their dreams. Sure, this is an ambitious goal. But with your help, we can do it.” In addition to this initiative, President Barack Obama launched the Task Force on Childhood Obesity to work in sync with the Campaign. Check out the five fabulous goals of the Task Force:

Creating a healthy start for children

    Empowering parents and caregivers

    Providing healthy food in schools

Improving access to healthy, affordable foods

    Increasing physical activity

Our founders, Jason Hammel, Paul Kahan, Matthias Merges and Ryan Poli were inspired by these goals to being Pilot Light. They were particularly struck by Michelle Obama’s “Let’s Move, Chefs Move to Schools” campaign. This campaign focused specifically on what our founders wanted to do: go one step beyond nutrition education by bringing experienced chefs into the classroom. They did not just want to pass out some recipe booklets and talk about why vegetables are good for you. These chefs wanted to SHOW kids how exciting cooking and eating can be, and they wanted to empower them to have their own voice in the kitchen. They aimed to develop comprehensive lesson plans with Chicago teachers, so that children could learn about food in ways that were comfortable and creative.

At Pilot Light, we share a common mission with the First Lady’s Let’s Move Campaign. We strive to bring good, whole food to children of Chicago, in hope of bettering their overall health. We have been thrilled with seeing such great success from the Campaign, as well as in our own lessons. Not only have Michelle Obama’s efforts soared in the classroom, she has made great impact at the policy level as well. The Health Hunger Free Kids Act was passed in 2010. She made sure that it was a top priority of the Campaign to work with health professionals and get this act passed. The act helped to ensure the National School Lunch Program added more fruits, veggies and whole grains to meals, and reduced amounts of meat and sodium. The act also impacted school snacks and vending machines, requiring reductions in foods with high sugar and fat content and more offerings of fruit and granola snack bars.

These steps might seem small, but as the saying goes, slow and steady wins the race, and this rings true for legislation in school food systems. It can take years of hard work and dedication to make changes like this at the policy level, and Michelle Obama is making it happen.

Here at PL, we are making waves too. We work to introduce new and healthier foods to little ones, but we also focus on integrating food education into the curriculum. It is important to offer children healthy options for breakfast, lunch and snacktime, but if they have never heard of that new fruit or veggie, or they have no clue what “whole grain” really means, they can feel intimidated and uneasy about that first taste. We work with Chicago chefs and teachers to weave lessons about food into everyday lesson plans. Soon enough, we begin to see children recognize ingredients that were once completely foreign to them. They remember that time we made vegetables taste GOOD and they share that recipe with their family at home. They make connections between where their food comes from and how it ended up on their plates. They might even go home at the end of the day and ask their mom to make them a kale salad. Yes. I said KALE. (true story from one of our stellar sixth grade foodies)!

We aim to teach children that food impacts every aspect of their lives. We show them thathealthy eating can actually be FUN, and they can learn about new foods through lenses that are familiar to them like math, science, history and social studies. When little ones learn that the mysterious green veggie on the plate is good for their minds and bodies (and it might even be tasty!) they just might be a bit more open minded, and open their mouths a bit wider to take a taste.

  • Spice Up September

    Spice Up September

    By Brenna O’Dea

September is coming to a close and we all know what that means…leaves are changing colors…sweaters are lining the shelves…and PUMPKIN SPICE IS COMING. YOU CAN’T RUN. YOU CAN’T HIDE. PUMPKIN SPICE WILL NOT BE DENIED. Okay, okay, so it’s not all bad. Some people just can’t get enough of the stuff. With pumpkin spice cereals, bagelsbeer, even GOAT CHEESE, there is clearly a massive market for these squash specialties. Speaking in my totally non-biased completely objective all-knowing opinion, I HATE THE STUFF. Alright, you got me, my distaste and disgust for the pumpkiny spicey varieties of just about anything is absolutely subjective and counter to much of our culture today. But I just can’t help it. I think it’s yuck yuck yuck. So I am here to save the day for all of my fellow pumpkin spice protestors. Wave your hands and flags high and JUST SAY NO TO PUMPKIN. Do not give in to societal pressures that meet you everywhere you turn. Along every grocery store aisle…around every dark corner…IN YOUR NIGHTMARES. It’s time to wake up to a beautiful pumpkin-free reality. Today I bring you plenty of sweet ‘n spicy options that have absolutely nothin’ to do with pumpkin’.

We’ll start of simple with a sprinkle of cinnamon. We are pro cinnamon for all of its “anti” properties. Antioxidants, anti-inflammatory, anti-diabetic – this classic flavor booster is filled with health benefits. Another benefit – it goes with just about every dang food out there. Bake with it, broil with it even barbecue with this baby. Not quite ready to sprinkle cinnamon over your rack of ribs just yet? Mix it into your morning oats or blend it right into your morning smoothie. Try adding a dash to your tea, coffee or even lemon water. Stir it into soups for a note of softness ‘n sweetness. It may sound stale, but cinnamon is still kicking and it’s one of the easiest, most versatile spices to have at hand in YOUR kitchen, especially at this time of year. Added bonus –  kids LOVE the stuff.

Taking things one step further with cardamom. It’s a bit of a tongue twister but this special spice will leave your tongue happy and healed. Just like its sister spice, cinnamon, cardamom offers a few fabulous health benefits. We love the stuff for its anti-carcinogenic & anti-depressant perks. A spice that makes you smile? We’ll take a spoonful or two. Many people are not as familiar with this spice as others such as cinnamon, but the possibilities are truly endless. Baby carrots, Crème brûlée, sweet potato biscuits – sweet or savory, this spice can enhance everything from your soup to your shortbread. Cardamom offers a flavor profile somewhere between cinnamon and nutmeg. In fact, if you are ever caught in a pinch without even a pinch of cardamom in your kitchen for that batch of carrot cake, you are in luck if you’ve got some cinnamon and nutmeg in the pantry. Mix together equal parts and that cake will be just as tasty as if you used the real deal.

Coming in HOT with cumin. Okay, so it’s not THAT hot. But it sure is delicious. The perfect pinch in many Mexican & Indian dishes, this aromatic herb can amplify all your lunch or dinner dishes. Looking for a cumin kick even earlier in the day? Whip up this perfect plate on chilly fall morning when you are too busy to bake that fresh frittata but still in the mood for something scrumptious ‘n savory. Cumin spice is ground up cumin seed which is a member of the parsley family. Besides packing a punch of flavor, cumin is known for its high levels of iron and manganese. Pair cumin with oregano for a milder modification, or combine cumin & chili pepper for a meal on the spicier side. This spice boasts great versatility for many cuisines. Looking to try one out? There is not better option than namesake itself. Dine at Cumin, a nepalese restaurant on the hip ‘n happenin’ Milwaukee Ave. Enjoy everything from lamb kabobs to veggie dumplings, all loaded with the warmth and wonder of this special spice.

Taste the rainbow? I say taste the turmeric and start adding this baby to just about everything you eat (and drink) and just about everything you feed your little ones. A little will go a long way, just get ready to do some extra scrubbing with that bright yellow tint it brings to everything it touches. It also brings bundles of health benefits, the most powerful being its anti inflammatory qualities. Turmeric reduces inflammation in joints and can reduce joint pain and even the symptoms of arthritis. Today it has even become popular as a supplement. People are popping turmeric capsules to aid in digestion, bloating, headaches, even gum disease. These positive qualities are due to the potent chemical in turmeric, curcumin (not to be confused with cumin!). This chemical is actually what gives turmeric its nearly neon yellow hue, and studies show it can provide relief from nausea and indigestion. But enough about tummy troubles, what are we most interested in? EATING (and drinking). Try your hand at these recipes to enjoy the warming, healing benefits of the spice. And for the perfect fall evening in, curl up by the fire with a good book (or a good cookbook) and sip on some turmeric milk or “golden milk.” Your body and soul will thank you.

Pass the paprika. Chicken, chickpeas, even CHURROS – this bright red ingredient is the dried, ground species of pepper known as Capsicum annuum. Don’t worry, that’s about as scientific as we’ll get, besides, we care more about the taste than the technicalities. Popular in Hungarian cuisine, paprika makes a lovely addition to many stews and sauces, especially if meatballs are involved. And remember that famous line from way back in high school, some famous dude said it, I think his name was William Shakespeare…”though she be little, she is fierce!” Well he was actually talking about this petite pepper. Just a few dashes can amp up your omelette and even that good ol’ avocado toast. Going beyond the fabulous flavor, paprika contains plenty of vitamins A, B & E, along with Iron & Capsaicin – capable of relaxing your blood vessels. So add a pinch of paprika for a boost that your blood flow and bellies will love.

Did somebody say dukkah? Pronounced doo-kah, also known as duqqa, this Egyptian spice blend is really something to talk about (and taste!). Loaded with flavors & textures galore, dukkah typically includes some sort of nuts, seeds, spices and herbs. Sesame seeds, coriander, cumin, fennel, almonds and hazelnuts are pretty common in this magical mixture, but feel free to add your own twist depending on your taste! Dukkah is often compared to za’atar, a Middle Eastern mixture of similar herbs and spices – nixing the nuts. Combine these already complex seasoning blends and your plates and palates will sing. A super simple and satisfying way to use either of these babies is just sprinkle it over your favorite hummus and dive right in. If you crave the crazy flavors first thing in the morning, toss some dukkah in with your scrambled eggs, fried eggs, however you like ’em. Ditch the sodium laden bottled spice mixtures you can find at the grocery store and mix some homemade dukkah into your pasta sauces, or just drizzle some GOOD olive oil and a dash of dukkah for pasta perfection.

You can’t spell clove without a little bit ‘o LOVE. I have never been a big fan of edible flowers – it just makes me a bit sad biting the heads off those beauties from Mama Earth. Cloves on the other hand, are some of the more flavorful flowers around and I have no problem chowing down. I also must note that even though I don’t like eating flowers I have no problem consuming copious amounts of bacon AKA tiny baby piglets…but my undying love for bacon is a story for another time. Cloves do not make my mouth water quite as much as cured meats, but they can certainly warm my soul on a blustery night. An Indonesian native, the clove flower is typically dried and sometimes crushed to be sprinkled onto and into everything from a big mug of tea to a big batch of gingerbread men (and women!) Speaking of ginger, clove and ginger are two spices that were just MINT to be (get it? that herb pun there? eh, I tried). Keep your eyes PEELED (bad food pun alert #2) for my ginger focused piece when Christmas time rolls around…but for now cloves will have to do. They actually make the perfect addition to a more timely holiday treat, pumpkin pie. You heard me, PUMPKIN pie. Yeah, yeah, I ranted about my personal vendetta against all things pumpkin, but when that buttery crust meets that crisp clove-filled filling, I really can’t complain.

Sugar, spice, and everything nice. And we mean EVERYTHING. This baby is bouncing around from it’s original home that will always have a special place in our hearts, bagels. The everything bagel is a classic that is tough to beat, but foodies around the world are trying, and boy are they succeeding. Poppy or sesame?? Must I choose? Why can’t I have my cake (bagel) and eat it too?? No more hemming & hawing over this impossible decision. You can have BOTH plus more! Sesame & poppy seeds, combined with the three musketeers: garlic, onion and of COARSE some salt. Okay. I’m done. I swear. Just stir up these simple ingredients and you’ve got yourself the perfect everything spice that can basically go on top of everything. It will bring that bite from a salty chewy bagel to everything you eat. Bagels for every meal? Excluding those who forego gluten (myself included), that sounds pretty darn close to heaven. There are too many marvelous recipes to include them all here…so stay tuned for an everything spice extravaganza post coming soon!

I hope I have instilled some hope in you today. Hope for a better, brighter future, free of pressure to pumpkinize your life. No disrespect toward all my pumpkin lovers out there, you are not alone, and you clearly have stomachs of steel. I however, steer clear of pumpkin spice products this time of year. I much prefer my paprika pickles & turmeric tea.

  • Teaching, Tasting & Telling Stories: One Lovely Day in August

Teaching, Tasting & Telling Stories: One Lovely Day in August

A few weeks ago we wrapped up our summer with a special event honoring our teachers and chefs. Some of the hardest working people around, these members of our Pilot Light family bring our vision to life with every lesson they teach and every child they inspire.

Imagine walking into a classroom. You have only been a fourth grader for a few weeks and you still have some nervous jitters. One of your favorite comforts is having the same meal for lunch everyday: PB&J (no crusts please!), veggie straws, apple slices and a few dark chocolate chips for good measure. Today however, something is different. You see some grown ups wearing white aprons, yielding some super sharp knives and you smell something fishy. Not truly fishy, fish is not on the menu today, but PIZZA is.

At first, you are excited, a pizza party on this otherwise ordinary Monday afternoon? Sounds pretty good to me. But then you see something else. What is THAT? Is it cheese? What kind of cheese? Why is it so soft and mushy? It looks wet. Why is it wet? Are those tomatoes??? I guess I have eaten tomatoes in pizza sauce before, but seeing them fresh off the vine like that…I’m suspicious. What’s all that GREEN stuff?? Pine needles?? It smells kind of like soap…why are my teachers trying to ruin pizza for me?? Can I just stick to my PB&J please?

Fast forward one hour, you have devoured your mini pizza covered in fresh crushed tomatoes, fresh mozzarella and dried rosemary. You tasted some other herbs too. You learnt they were called basil, thyme and sage. You thought they tasted disgusting, but that’s okay. At least you gave it a try and ended up loving the rosemary. Onto the pizza pie and into your belly it went! This transformation, from fearful to full-bellied, cautious to confident, would not be possible without our wonderful partner chefs and teachers.

On August 23rd we hosted a day of discussion and appreciation for the teachers who lead our lessons in Chicago schools, and the chefs who guide these culinary experiences. The day opened with omelet making and a lovely introduction by two of our founding chefs, Matthias Merges and Jason Hammel. Our teachers enjoyed their eggs and more chefs filtered in throughout the day to continue cooking and talking about the future of Pilot Light in Chicago classrooms. Justin Large of Vander Mill Cider (another wonderful PL founder), Joshua Kulp of Honey Butter Fried Chicken and Sandra Holl of Floriole Café & Bakery just to name a few.

The teachers engaged in meaningful discussion and reflection about our goals for the new school year, and how we can better work to incorporate storytelling into our lessons. One of the most powerful moments from the day was hearing each teacher describe why they chose certain ingredients for their omelets. Did the smell of basil remind them of a childhood memory? Had they detested mushrooms as a child but grown to love them as an adult? Maybe they had never tried one of the ingredients before, for example, ooey gooey super duper fresh BURRATA, and they were just feeling adventurous that day? Isn’t it amazing how one simple ingredient, the egg, can inspire so many unique dishes and more importantly unique stories and memories? That is why we love food here at Pilot Light, and why we think food is such an important part of life for young children. Developing a happy & healthy relationship with food can start at a young age and only lead to happier & healthier trends later in life.

Discussions of culture, community, family, personal growth, sense of belonging – these are just some of the topics we scratched the surface of on this wonderful day of learning. After preparing an incredible meal right alongside our chefs, the teachers sat down together to eat and enjoy. Laughter filled the gaps and there was a beautiful sense of calm. Or at least the calm before the storm…a fresh classroom full of rambunctious kids!

We look forward to the rest of this school year and hearing stories from your little ones about their favorite foods, least favorite foods and that one time they tried that funky green stuff…and loved it! What was it called again…? Rosemary! Okay, okay, they will always have a soft spot in their heart for that classic PB&J, but hey, so do we, and there’s nothin’ wrong with that.

  • Battle of the Booch

    Battle of the Booch

    By Brenna O’Dea

Are you part of the fermenting frenzy sweeping the nation? From pickles to sauerkraut to kimchi to KOMBUCHA, more and more people are munching and sipping on fermented foods to aid in overall health and digestion. Now what exactly is kombucha? Maybe you’ve never even heard of this wacky word before. Look no further, we’ve got the knowledge you need to decide if this fizzy beverage is right for you, and which flavor you might fancy. Before we begin our taste tour, I will let you in on a little secret. Kombucha is not as complicated as it sounds. It is simply tea combined with a starter culture containing yeast and healthy bacteria. Let these ingredients mingle for a few weeks and you’ve got yourself a freshly fermented creation loaded with friendly bacteria that will leave your taste buds and tummy happy. Now I will introduce you to a few friends in the booch business:

    Who? GT’s Kombucha

    What? Enlightened Synergy Trilogy

    Where? Beverly Hills, CA

If you’ve only tasted one booch brew in your lifetime, this is probably it. One of the most popular brands on the market, offering a wide variety of flavors, GT’s Kombucha has something to sip on for all palates. “Mystic Mango,” “Strawberry Serenity,” “Cosmic Cranberry” and “Guava Goddess” just to name a few. I have sampled a few of these fruity varieties, but usually stick with my personal favorite, Trilogy flavor. With notes of raspberrylemon and ginger, it is the perfect sweet ‘n tart afternoon (or any time of day) pick me up. Loaded with folic acid and five, count ‘em, FIVE B vitamins, not to mention only TWO grams of sugar, just a few sips (or the whole bottle) will crush your sugar cravings and give you a healthy energy boost.

Who? Raw & Organic Live Beverages

    What? Sparkling Ginger

    Where? Austin, TX

If you are feelin’ the fizzzz then this brew is for you. So I guess I am a bit bias toward ginger and I can just never get enough of the stuff. This one however, has a fainter ginger flavor and tastes a bit more sour. Now for kombucha, sour can definitely be a good thing. This one is all about the fizz and less about the fruit, with just hints of ginger throughout and that’s pretty much it. The fermented flavor from the yeast is not too potent, so if you like simpler flavors and want to ease into this whole drinking bacteria thing, I would opt for this baby.

    Who? Kevita Sparkling Probiotic

    What? Lemon Cayenne

    Where? Ojai, CA

Sweet ‘n spicy says it all. As someone with a very low spice tolerance, I can definitely handle the hints of cayenne pepper in this potion. They are nicely balanced with soft sweetness from the maple syrup and tingling tartness from the lemon juice. Just a few simple ingredients but plenty of flavor and flare. Sip on this sparkling beverage on a hot summer day, or after a sweat session at your local SoulCycle or Corepower Yoga. This drink is the perfect refreshment after detoxing your body with some good ol’ fashioned fitness.

    Who? Tapuat Brewing Co.

    What? Wellness Kombucha

    Where? Door County, WI

A recent discovery, this brew is one of the freshest I have tasted. Bursting with bubbles and some fascinating flavors, this Wisconsin based booch brings things to the next level. The Wellness flavor includes elderflower, elderberry, Echinacea, olive leaf, lemon balm and of course, ginger root. With these herbs and spices this kombucha brings a bundle of health benefits with each sip. Tapuat offers a wide variety of interesting flavors for the more adventurous palates, including brews made with gunpowder green tea, local bee pollenrosehips, hibiscus, pineapple, lychee and ginkgo biloba.

    Who? NessAlla Kombucha

    What? Juniper Rose

    Where? Madison, WI

And now for the grand finale…living as a Madisonian for four years I have been lucky enough to taste this fine delicacy. Brewed just down the street, I can taste the freshness in every sip. Juniper rose is one of the more floral flavors I have encountered. This brew is particularly powerful making it a great option for those who love the potent fermented flavor. NessAlla also offers seasonal flavors including their fall flavor, turmeric lemon ginger, and their winter flavor, hibiscus cardamom ginger. Heat some up and curl up by the fire with a good read for a cozy oasis on a cool winter night.

Now that you know the basics of brewing the booch, go grab a bottle (or ten!) and try them out for yourself. Maybe you can even try making your own, or mixing some with your morning coffee. You can even get it delivered right to your front door. Whether you favor sweet or sour, hot or cold, elderberry or Echinacea, you are sure to find a kombucha that keeps your taste buds singing and energy levels soaring. So swap out your next tame glass of tea for a bubbly bottle of fermented freshness, you just might be pleasantly surprised.

  • Chow Down Chi Town: Outdoor Eats

Chow Down Chi Town: Outdoor Eats

September is still young and we want to help you squeeze every last drop out of summer. Dine out(side) at one of these lovely local eateries to enjoy the sweet sunshine and some savory bites that will leave your cheeks pink with glee and bellies full with warmth.

Big Star: It’s Taco Time. Chipotle. Chorizo. Chihuahua. Any topping. Any time. Paul Kahan of Big Star (and one of our fabulous founders!) brings BIG FLAVOR to the great outdoors…or at least to the heart of Wicker Park right near some train tracks. Hey, we’re city folk after all, right? Take a seat and take your time. With a stellar lineup of tacos, tostadas and torreados (don’t worry, I’ll explain later), this menu will keep you satisfied for breakfast, lunch, dinner or all three. Let’s start with those Chiles Torreados…jalepeño peppers…salted & grilled. Sounds simple. Tastes SPECTACULAR. Sick of spice? Go for the Taco al Pastor – loaded with pork shoulder, grilled onion and grilled pineapple, this one packs a sweet punch. Vibing with the veggies? The Taco de Zanahorias takes carrots & ranch to a WHOLE new level. Spiced carrots & almonds, pumpkin & sesame seeds, chipotle date yogurt sauce…who even needs meat?? So grab an iced glass of one of their many beers, whiskeys, tequilas, cocktails or house selected single barrels (I know, ALMOST too many to choose from), and kick it with a crazy carrot taco. HINT HINT…veggies that all little hands will enjoy!

Irazu: End summer with a BYOB bang at this delightful destination. Fresh ceviche, fried plantains and for dessert something unexpected…over a dozen milkshakes to choose from. Irazu brings the flavor and flare of Costa Rica to Bucktown in the perfect summer setting. Heat things up on a cool September evening with the vegetarian Chile Relleno dinner and a side of HOT peppers, or cool down this end of summer heat with the cabbage salad and an Iced Costa Rican Coffee with a splash of HORCHATA. Not a night owl? No worries. This hot spot is open for an outdoor breakfast the whole family will enjoy. Tiny tasters will devour the Arroz con Huevo – a SCRUMPTIOUS scramble of rice and eggs topped with avocado AND plantains. Looking for a bite on the go? Grab an empanada (or try all NINE FLAVORS). Cheese, chicken, chorizo…black bean, mushroom, zucchini…stomach growling yet? Costa Rica is calling your name…and we suggest you answer. Just don’t forget to bring your appetite.

Publican Quality Meats: DROP EVERYTHING and cancel all your plans this weekend. You will be too busy DROOLING FOR DAYS over the exceptional offerings of Publican Quality Meats. Brilliant brunch options brought to you again by our friend Paul Kahan. Did wake up on Sunday with a sweet tooth? Try the banana muffin with honey ricotta or the cinnamon toast with honey butter. Craving salty over sweet? Two words: sausage plate. Three house made sausages, summer vegetables, farmer’s cheese and a side of an afternoon nap. And I can’t forget the classic avocado toast, but this one’s topped with heirloom tomatoes, crispy shallots, chili, harissa AND scrambled eggs…did somebody say FOOD BABY?? Bring your family and friends to this Fulton Market find and get ready for a brunch for the books. There’s no rush this weekend. Slow it down, sip some coffee and savor those last few weeks of summer sun (and some salty summer sausage!)

Parson’s Chicken & Fish: West Chicago with an East Coast flare, stop by Parson’s for your fish fry and fritter needs. Try the Texas toast or Patio Pasta Salad if you’re loading up on the carbs for that long run along the lakefront…or just because who doesn’t love bread AND pasta? Take a step away from the city chaos and with just a bit of your imagination (remember that beautiful thing, from art class back in elementary school?) you will feel the salty seawater breeze on your cheeks and taste the simpler times. The brown wood of the picnic tables, red & white of the umbrellas and grassy green surroundings will remind you of cookout time at camp…with one important addition that we like served on the rocks with salt. For a super sweet sip try the pineapple punch. It is the perfect pairing with garlicky cheese curd fritters. Pop over to Parson’s for a fun Friday night and a round of toast for the table!

Bridge House Tavern: Wine on the water anyone? It may not be the Gulf of Mexico, but a cool glass and fresh bite by the Chicago River does the body and mind well. Bring all the little ones along and order the honey bacon popcorn, or pass around the po’ boys – tuna or crab cake, take your pick. The tavern fries are a splendid shareable (they have bacon too), or let your little ones get their sticky fingers on one of the last summer bruschettas of the season (THIS HAS BACON TOO). Don’t worry, for the non-bacon-lovers out there (if there are any) try the mussels in a tarragon saffron sauce or chicken salad on a pretzel bun. And for brunch, there is really only one choice…FRESH BEIGNETS. But they didn’t stop there…served with a CINNAMON MAPLE GLAZE and BAILEYS WHIPPED CREAM, these perfect puffs will put you in a good mood on any gloomy September morning. Of course, the kids only get a taste if they try some of your veggie omelet first – loaded with super spinach, mighty mushrooms and tasty tomatoes. Get it with goat cheese or without (for petite picky palates) and a side of potatoes and toast (opt for wheat over white!) So feast on some fries (and greens!) at this waterfront wonder before walking it off along the Magnificent Mile just minutes away.

Blackbird: Set on hustling, bustling Randolph Street, Blackbird is perfect for a sophisticated summer date night (or dine indoors in on a chilly winter night for a serene evening of elegance). Who is the chef & owner behind this one? You guessed it, Paul Kahan! (We can’t help it, he is just so talented!) Once again his menu does not disappoint. Start the night with the roasted quail, served with n’duja sausage, savoy cabbage, red verjus and purslane (red grape juice and parsley if you’re like me and still growing your foodie vocabulary!) Feeling fishy? Order the crudo of fluke for a first bite bursting with blueberry, jasmine and burnt lime loveliness. And the star of the show…the suckling pig with sport pepper, roasted sunchoke, sunflower seed, almond milk and burnt lime (we’re loving this seared citrus thing!) So try Blackbird for one final hurrah this summer…or stay one step ahead and reserve your table now for a Valentine’s Day delight.

Ada Street: A hidden gem (literally), this dining experience will fill your bellies and warm your soul. Tucked away in a back alley full of more elegance than most front yards, Ada Street offers crafty cocktails and small, sophisticated plates. Dine in for a view of the floor to ceiling libation selection along the mirrored wall, or dine out for a night on the peaceful patio. Kick off your weekend with sweet & spicy chicken wings cooked in duck fat served with a cool cucumber salad. Or the Wagyu tartare garnished with fried capers. Then move through the meal with gnocchi, short ribs, diver scallops or baby octopus. Mingle after dinner with drinks and dessert. The buttermilk panna cotta with chamomile caramel and garam masala cookie is a popular pick, but my personal favorite (maybe you read about it in my previous piece on spiced up s’mores) is the one with the simplest title and sweetest taste: “Chocolate.” One word. One love. The darkest chocolate ganache with the fluffiest sourdough for dipping, and some savory sea salt and olive oil for a smooth ending. Ada Street is smooth all around and this tasty treat is just the cherry (or chocolate) on top of what is sure to be a perfect evening on the patio.

Chicago’s crazy winter is coming…but not quite yet. Soak up some final rays of summer sun while you still can. Before you know it the kids will be eating up more of their vegetables than usual…in hopes of receiving everything they asked for on their Christmas list.

  • Chow Down Chi Town: Kid Friendly Eats

Chow Down Chi Town: Kid Friendly Eats

We’ve got some good news and some bad news…let’s rip the bandaid off first…the babysitter canceled. You FINALLY decided on which sandals to wear for date night, you opted for flats over heels because hey, summer is almost over and you feel like dancing in the dark while you’ve still got the chance. IT WILL ALL BE OKAY. Don’t reach for the take out menus just yet…we’ve got some local spots that are so kid friendly you won’t even know they are there… because they will be too busy licking their fingers to bug you.

Left Coast Food & Juice: Just a few months old (just like your youngest!) this fresh find offers superfood boosted smoothies, amped up avocado toast, buckwheat not one but TWO ways (pancakes AND crepes), and more. One of our wonderful founders, Paul Kahan, created menu items that bring a new sense of health and freshness to fast dining in Chicago. Ditch the burger and fries. Grab a vibrant salad of shaved carrots, beets, roasted broccoli, toasted walnuts, sunflower seeds, crunchy quinoa, and lemon yogurt. This salad doesn’t disappoint. If you need a midday meat pick me up, try the “D-O-Double G” wrap with turkey meatballs, roasted tomato, spicy hummus, parsley AND romaine, and tahini hummus all bundled in a whole wheat wrap. Most importantly, the unique kids menu is tiny but mighty:

“Uncle Rico’s Quesadilla”: made with a whole grain tortilla and served with some nutritious sides, green beans and brown rice. Add chicken or avocado for a protein packed meal.

“Holy Meatballs”: made with turkey meat, served over couscous…now this one is served with broccoli, but the tomato sauce is so good that even the pickiest of palates will devour this dish.

“Chicken Little”: get your greens and your oranges with the fresh peas and carrots in this delightful dish, and some healthy grains too with a quinoa kick.

“Sunbutter & jelly time”: nut free but flavor full, this is definitely not your ordinary PB&J. Add sliced apple or banana for a fruity surprise – it’s like dinner and dessert all in one.

Crosby’s Kitchen: Kick off the evening with some deviled eggs (lobster deviled eggs to be more specific). These little gems are perfect for little fingers. Then dive into some radiant rotisserie chicken and brilliant buttermilk biscuits for the main course. Smear on some house made strawberry rhubarb jam (and extra butter if you dare) for an end of the night treat that will leave taste buds of all sizes tingling with joy. And if the kids still have some room left in their little bellies, we’ve got two words for you…SKILLET COOKIE. Drowning in vanilla ice cream, oozing with ooey gooey melty mushy chocolate chips, everyone will want (need) a fork, and even the adults might need bibs for this bad boy. P.S. KIDS EAT FREE EVERYDAY FROM 4-6PM.

Roots: Kids will want to order from your menu and theirs, with choice like Garlic Monkey Bread Bites, taco pizza, and their choice of seasoned curly fries or sweet potato tots. Tots for your tots, it doesn’t get much better than that. And in case you missed it…TACO PIZZA. For moms, dads, and any one who is past the blissful age of being amazed by two foods combined in one, there are some spectacular salad and of course PIZZAS to choose from. Caprese with…bacon, kale with…roasted Brussels sprouts, and chicken salad with…wait for it…toasted ramen noodles. And we haven’t even got to the pizza yet. Duck sausage, pulled pork, pickled fennel, sauerkraut, Gouda, Manchego and even cheddar CHEESE CURDS (for all you Wisconsinites out there), the flavor profile possibilities are close to endless. Throw some apple, arugula and roasted squash on top for a slightly sweet superfood slice for the kids. Or try chicken sausage, broccoli and pear for a protein packed pizza pie that little hands will love.

Honey Butter Fried Chicken: Check out the “Kid’s Corner” at this local gem. From executive chefs Christine Cikowski and Joshua Kulp comes one of the greatest (and most drool-worthy) deals in town – the “Honey Buddies Meal.” Offering perfect petite portions of fried chicken strips, pimento mac n cheese, corn muffins, honey butter, and a sheet of honey buddies stickers to keep them occupied after mealtime…if they aren’t already in a food coma. Wash down dinner with a big (or small) glass of refreshing housemade lemonade, or some organic milk or apple juice. And don’t forget about brunch. Chicken & biscuits, chicken & grits, or the most sinfully delicious of them all…CHICKEN & FRENCH TOAST…with bourbon maple syrup & honey butter as if it wasn’t good enough already.

Spacca Napoli: Super family friendly and super duper delicious. Spacca Napoli brings quality pizza and prosciutto to Ravenswood residents. Eggplant and octopus options for the little ones with open minds and open mouths. Potatoes and tomatoes for the fair-weather foodie. And of course PLENTY of cheese. SO MUCH CHEESE. Parmesan, Pecorino, ricotta, mozzarella…drooling yet? But the cheese is not even the star of the show. Even your youngest with sleepy eyes will perk up for dessert. They may not be able to pronounce “focaccia,” but they will go nuts over it smothered in Nutella, gelato and powdered sugar. Okay…not the healthiest of options, but hey, they tasted the puttanesca pasta with ANCHOVIES so they deserve a little treat.

Xoco: Did someone say CHOCOLATE?? Yes. We did. But first, we have to eat our veggies. Don’t worry, at this spot for elevated Mexican street food, getting your little ones to eat their vegetables will be easy as pie…or cake, or churros…Xoco has all of that. Anyway, start off with roasted garlic and lime peanuts, or bacon caramel corn (unless you want to save that one for dessert). Dive into the guacamole bar with toppings like grilled onions and pumpkin seeds. Choose from soup, salad, sandwich or a combination for the main course. Chicken, chorizo, mushroom, zucchini, pickled peppers, potato-masa dumplings…whatever your little ones want to try, they’ve got it. Now…for the preschooler with the sweet tooth, it’s chocolate time. They will love sipping on freshly made “bean-to-cup” drinking chocolate, with flavors like allspice and mint fresh from chef and owner Rick Bayless’ garden. They might be bouncing off the walls later tonight…so the grown ups can grab a cup of chocolate espresso or chocolate cappuccino to keep up. Now as long as they didn’t pick the arugula and zucchini off their sandwich…take some churros for the road with chocolate dipping sauce or soft-serve ice cream (or both)…and everyone will have happy full bellies for bedtime (once they run off that chocolate).

Lula Café: For the fiercest little foodies out there, Lula Café, of our very own Jason Hammel, offers much more than the typical tyke fare. There is no kids menu, encouraging your little ones to dine with the adults and order something a bit more adventurous than they normally would. Set in a classy yet kid friendly environment, Chef Hammel offers some of the best breakfast, brunch, lunch AND dinner in Logan Square. Take PB&J to a whole new level with the “Tineka,” a unique combination of Indonesian spiced peanut butter, tomato, cucumber, red onion and sprouts all resting on beautiful seeded whole grain sourdough. Still craving carbs? The spaghetti will push your little ones way past basic marinara, topped with sweet and spicy chile sauce, or “salsa rossa,” and dolloped with queso fresco and a hefty handful of BACON. Still not satisfied? Adventurous eaters and picky palates alike will want to dive in to the sweet corn dish…plums, pancetta, cashews, house made BUTTER…need I say more?

So don’t kick of your dancing shoes just yet. The night is still young, and even though you’ve got some young ones of your own to cater to this evening…these kid friendly (and foodie friendly) finds will let you have your cake…or cookie skillet…and eat it too. Unless little hands get to it first.

  • Keep Calm and Cook with Your Kids

Keep Calm and Cook with Your Kids

    By Brenna O’Dea

The time has come for your little helpers to do more than just set the table. They have started asking questions about what you are making for dinner each night…they almost seem suspicious. What are the gross green flecks in my tomato sauce, mama? (It’s basil). Why are my pasta noodles so brown? (They’re whole wheat). Let’s solve this mystery by inviting the kids into the kitchen early. Early in the process, when you are plucking those fresh basil leaves of your windowsill plant. And early in life, so we can encourage healthy eating habits before they head off to kindergarten.

Instead of clearing out the kitchen when it’s time to get dinner going, invite them in, spread the joy of cooking. Whether it’s one pot pasta or pizza pie, there are plenty of family friendly recipes out there that make cooking together (and eating together) easier than ever. I’m sure your meal will taste even better knowing that everyone had a helping hand in creating it.

There are so many benefits to introducing cooking to your kids at a young age. One of the most important being the development of a healthy relationship with food and mindful eating. Promoting mindfulness at home leads to a more at ease and focused child outside of the home. I am sure we all now look back on our childhoods as times of joy, fun and hardly anything truly stressful (compared to nowadays when even choosing what to watch on Netflix gives us a headache) but there are plenty of stress triggers even for young children. Making new friends, learning long division, choosing an after school activity…the list goes on. But you can build small moments of mindfulness and relaxation into your evening routine. Even chopping the veggies or stirring the tomato sauce can be a soothing practice for your most petite and pickiest eaters.

Mindfulness and meditation is an important skill for even very young children to learn. Eating and cooking is the perfect opportunity. Kids may be curious about what they are eating and why you are serving it to them. No need to disguise your ingredients under layers of bubbly melty cheese so they will eat it (although who doesn’t love a good gooey grilled cheese). Try talking to them about what each ingredient looks like, feels like, and smells like. Once they spend some time learning about their food, they might just be more willing to take a bite.

Cooking can be a very meditative practice and many chefs practice daily meditation as a way to distress and unwind from long tiring days in the kitchen. The next time you are in a rush to get dinner ready, slow down for just a moment, and invite the kids to join in. Even just washing the strawberries or husking the corn can be a fun and new activity and memory. They will look back on summer nights with less memories of favorite TV shows and video games, and more memories of delicious dinners and fun facts about their new favorite fruits. So sit back, relax, and get cooking! There are so many ways and recipes to get the whole family mixing and munching together. Just grab your ingredients and your littlest loved ones and dive right in.

  • Kava Kraze

    Kava Kraze

    By Brenna O’Dea

3pm rolls around again…you are headed for the nearby coffee cart, café, or just the abandoned half empty cup o’ Joe you spotted at the conference table mid morning. DESPERATION CALLS OKAY? This time, don’t answer. Swap in your usual afternoon pick me up for a new and exciting herbal boost that will leave you feeling fresher and lighter for the rest of the day. Maybe you will actually be able to stay awake for that midnight premiere! Okay…it’s the Angry Birds movie…the kids begged you to take them (don’t worry, we won’t tell anyone how secretly excited you are). Anyway, we’ve all heard about the old “coffee or tea” battle. With the latest herbal beverage boom, picking sides will be easy.

Meet Kava. Commonly grown in Hawaii and Fiji, this root has made it’s way to the states in the form of a delectable, drink with the potential to de-stress even the busiest of bees (I’m talking to you, mama with the newborn twins). Traditionally, we see kava used in many forms. Grog, is a drink made up of sun dried kava that has been smashed into a fine powder and mixed with cold water. Bilo is a similar concoction however this treat is typically sipped from a coconut. Kava is also known for it’s medicinal qualities and has been taken for centuries as an herbal supplement for reducing stress, anxiety, and depression.

My favorite way to curb the kava craving? Sipping on a nice big mug of hot Kava Stress Relief tea, specifically from Yogi Brand Tea. It also doesn’t hurt to nibble on a square of dark chocolateor twoor five. This particular kava tea actually has notes of chocolate in it already, and the deep, earthy taste will leave you feeling warmed and grounded. Yogi even adds touches of cinnamon and carob for an extra sweet, soothing bite. Pick up some kava tea next time you are in the supermarket and guzzle this goodness from the comfort of your own home…maybe the kids out for the afternoon and you can even squeeze in a nap! Ah, pure bliss.

Do you prefer stepping out for a sip rather than curling up on the couch? Have no fear, the kava bar is here! Cruise on over to Tropikava Kafe & Juice Bar for a kava filled Friday afternoon that will put you in the perfect mood for the relaxing weekend ahead. Located on Hermitage Avenue in the bustling Wicker Park neighborhood, this serene spot will help you take the edge off any stressful day. Choose from an abundant menu of kavalicious creations bursting with flavors of cinnamon, coconut and coffee. Maybe you are just out on a relaxing Sunday stroll and don’t even need that stress busting boost. There is plenty of kava free fare to feast on from regular teas to ginger filled juices. And for the little ones? They will just love sipping on a sweet smoothie full of fresh fruits and healthy ingredients like oats, agave and almond milk.

So keep kalm and kava on. Whether you prefer proper tea time with cookies and crumpets, or a cool café with a mellow mood, kava root tea is a lovely addition and solution for that afternoon slumber slump. Avoid the caffeine crash by choosing tea over coffee, and share a sip with the kids to encourage early healthy habits of sipping on spices over soda. Now sit back…sip away…and sail off to paradise…I’m already halfway to Maui in my mind…

  • Spice Up Your S’mores: 10 Variations

Spice Up Your S’mores: 10 Variations

Gather round the campfire! The sun has set. The fireflies are buzzing. The wood is burning and waiting for you…to roast your marshmallows. But are you feeling bored and blasé about the usual marshmallow+chocolate+graham cracker creation? Well I’ve got 10 ideas that are sure to push your s’more making abilities to the next level.

Have you ever plunged head first (or spoon first) into a jar of peanut butter only to realize a few too many episodes of Game of Thrones later that you have hit the bottom? (C’mon, admit it, we’ve ALL done it). Spread some of that LOVE on your s’more this summer with the amazing addition of Wild Friends Nut Butters. Peanut butter, almond butter, sunflower seed butter, and even nut butters with an extra whey protein BOOST. With flavors like cinnamon raisin, chocolate coconut, sesame cranberry, and honey pretzel, just one dollop combined with that ooey-gooey toasted marshmallow will without a doubt transform your s’mores into drool-worthy delights.

Haven’t had enough nut butter? This addition is simple, salty, and sweet all at once. Toss the regular chocolate bar. Instead, swap in one (or two…shh no one is looking) Justin’s peanut butter cups. These babies are straight up DIVINE. Thankfully they come in packs of two for those of us with less than admirable self control in the chocolate department. Something special about these bundles of joy, they contain absolutely ZERO dairy or gluten, and they are certified USDA organic.

This one is for those looking to get a bit more creative in the kitchen…and maybe even get the kids involved in the cooking! Try making your own marshmallows! Better yet, try making STRAWBERRY marshmallows! This recipe involved plenty of pouring and stirring – perfect for little hands with less culinary experience. Even your kindergartner will love to help mix up that bowl of pink GOOEY GOODNESS and they will be even more excited to see (and eat!) their final creation.

Not a fan of the typical graham cracker? Maybe you struggle to find gluten free options for your s’mores? We have the answer…and it is DELICIOUS. Pop a few of Van’s gluten free waffles into your toaster, or warm them up right on the fire! These toasty treats will add an extra crunch and crisp to your chocolatey marshmallowey sandwich. High in protein and fiber, low in sugar and mysterious ingredients you can’t pronounce, these waffles will turn your measly average s’more into an energy packed snack. It might take a few extra laps running around the campfire to wear the kids out…but hey, it’s summer after all.

Feeling fruity? Try slicing some fresh fruit right onto your s’more – look for bright berries at your local farmer’s market, they are sure to add a juicy tangy bite. SWEET strawberries pair perfectly with melty chocolate, and ripe bananas aren’t a bad option either. Adding fruit to this dessert will give it the health boost it has been waiting for. Berries and bananas are some of the most beneficial fruits around, and they open up the door for some easy peeling and chopping for your little ones.

If you don’t have time to pick up fresh fruity additions, a dollop of fruit preserves will be just as delicious. Opt for jams over jellies to avoid added sugars and a watered down flavor. If you’re feeling super adventurous, make your own! These recipes for raspberry and blackberry chia seed jam are quick, easy and fun for the whole family. Spend the morning in the sun picking your favorite berries, then spend the afternoon smashing and stirring until you have jars and jars filled with your very own HOMEMADE superfood boosted jams! As for nighttime…well s’mores of course.

Speaking of superfoods…you don’t have to make chia seed jam to reap the benefits. Simply sprinkle on your favorite nuts or seeds and your s’mores will be extra crunchy and healthy too! Crushed up peanuts or slivered almonds add great texture to the soft, smooth marshmallow and chocolate. Set up a s’more bar with all of the ingredients and toppings laid out around the campfire. Your little ones will LOVE creating their own unique desserts…and they might be more open to the idea of trying vitamin and mineral packed nuts and seeds when they are combined with melty marshmallows and chunks of chocolate.

Looking for a little more spice in your life? Well sprinkle away! With easy additions like cinnamon, nutmeg or ground ginger, your s’mores will taste sweeter and spicier than ever before. To kick it up one notch further…grab the cayenne or paprika for a mighty HOT and metabolism boosting bite. Not a fan of spice but still looking to take your tastebuds on a wild ride…fresh herbs will do the trick! Add a few leaves of mint or basil to pump up your chocolate and satisfy your savory cravings.

For the animal lovers who don’t love the idea of eating gelatin filled marshmallows, don’t fret, there are certainly vegan options out there waiting to be devoured. Pick some up at your local Trader Joe’s or bring the kids into the kitchen and make your own. We’ve got you covered for ALL of your vegan marshmallow needs with recipes for both the square and fluff varieties! Even without the gelatin, these babies will taste sweet and chewy just like the real deal.

Last but certainly not least, for the kitchen connoisseur, swap out your graham crackers for sourdough, drizzle on some olive oil, and sprinkle on some sea salt. You heard me, sourdough, sea salt, and olive oil, oh and we can’t forget the chocolate. This sinful indulgence is inspired by one of, if not the most AMAZING dessert I have ever sunk my teeth into…and drooled over. Ada Street offers a dessert of these four simple ingredients and it is something truly magical. This sweet, salty and sourdough filled s’more combination will leave your belly happier than ever before. Plus, we’ve heard that sourdough and dark chocolate offer some surprising health benefits. Bread and chocolate for health? Don’t say another word.

So forget about the stale s’more recipes you’ve been munching on for decades. Don’t get me wrong, I am all about tradition and classic food combos that will probably be part of American food culture until the end of time…and rightfully so, I mean who doesn’t LOVE chocolate+marshmallow? But there is always room for a little extra sweetness, spiciness and creativity in the kitchen. If you start with s’mores, your kids are sure to try out some new foods and flavors in the future.
