I am an Australian native and have spent much of my life living overseas, I spent 10 years living in London and now based in Chicago. My appreciation of food came very late in my teenage years, before then I was a very fussy eater and I don’t say that lightly ! Fast forward to my early 20’s I started traveling and got caught by the travel bug, I enjoyed learning about different cultures, emerging myself in their world and most of all what they eat. My holidays now revolve around what new food I will try and where I will be eating while on vacation. I am a big believer in ‘you are what you eat’ and have a 80/20 balance of lots of protein, fresh fruits, vegetables, grains, nuts and ensure there is always room for chocolate when needed !
I have a 6 year old son and enjoy teaching him about food, cooking with him, getting him involved in making a meal and growing herbs together so he understands what real food looks like. I want to be able to share my enjoyment of this with other children to ensure they have a great start in life.
Why are you volunteering for Pilot Light ?
I want to make a difference ! I make every effort with my son to instill healthy and fun eating habits into his day to day life. I want to share what I know and what I have learnt with other children. I admire the work Pilot light does and would be honored to join the journey.
What is your favorite food or meal ?
- Home baked potato wedges with herbs, spices and crushed avocado.
- Anything chocolate.
